Thai Spicy Shrimp Salad
ingredients
- 1 Tbs peanut oil
- 12 uncooked medium shrimp, shelled, deveined and halved lengthwise
- 1 stalk lemongrass, finely chopped
- A handful of cilantro leaves, finely chopped
- 2 pink Thai shallots or 1 small regular shallot, finely sliced lengthwise
- 3 scallions, finely chopped
- 1 red chili, seeded and finely sliced
- 12 cherry tomatoes, halved
- a handful of mint sprigs to serve
- 3 Tbs Thai fish sauce
- freshly squeezed lime juice of 1 lime
- 3 teaspoons brown sugar
- 2 Tbls Thai red curry paste

Heat the oil in a wok or large, heavy skillet, add the shrimp and stir fry for 1 minute or until opaque.

Put the dressing ingredients in a bowl and beat well with a fork until the sugar dissolves. Add the shrimp and all the other ingredients except the mint sprigs. Toss then serve, topped with mint.

We serve it on top of a bed of brown rice.
