Chicken on a stick
Try my homemade glaze, or use your own!
ingredients
- 2 lbs boneless chicken breast
- Kabob sticks
- Sauce or marinade of your choice
- 3/4 cup apricot jam
- 1 tsp honey
- 1 tbsp apple cider vinegar
- 1/4 cup water
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 2 tsp Crushed red pepper (or more if you want more kick)
- 3 tbsp of sugar
- 2 tbsp fresh ginger, chopped
- 1 tbsp white cooking wine

1) If making the homemade glaze, put all ingredients in a medium pot, and simmer on low heat for about 10 mins.

2) Cut chicken breasts into small chunks about 2 inches wide. Put about 6 or 7 chicken chunks on a kabob stick and lay the stick in a large shallow baking dish. Continue with remaining chicken.

3) Take your glaze or other sauce, and pour over the chicken kabobs.

4) Cover the dish with foil, and cook at 350° - 375° for approximately 20 mins, or until chicken is fully cooked. For best results, flip the sticks half way through.
