Ethiopian Lentil Bowl
ingredients
- 2 c dried red lentils
- 2 large onions, finely chopped
- 1 head garlic, peeled and mashed
- 3 T olive oil
- 3 T tomato paste
- 1/2 t paprika
- 1 t salt
- 1/2 t ground ginger
- 1/4 t pepper
- 3 c water
- 1/4 c lemon or lime juice

Sort and rinse lentils and cover with water. Soak 30 minutes.

Meanwhile, saute onion and garlic in oil until golden. Mix in tomato paste and paprika. Add remaining seasonings, 3 c water and mix well. Cover and bring to a boil.

Add the lentils, reduce heat and simmer, covered until the lentils have softened, 20-30 minutes.

Add lemon juice and serve hot.
