Bacon Cheddar Mashed Potatoes
All I remember is trying these out during a visit from the In-Laws, and “Aunt Nin” talked about how great they were for quite some time afterward.
ingredients
- 8 medium Potatoes, peeled and cubed
- 1/2 c. Sour Cream
- 1/3 c. Butter, softened
- 1 tsp. Salt
- 1/4 tsp. Pepper
- 1 c. shredded Cheddar Cheese
- 2-4 Bacon Strips, cooked and crumbled
- 1 tsp. minced Chives (optional)

Place potatoes in a saucepan and cover with water; cover and bring to a boil over medium-high heat. Cook for 15-20 minutes or until tender. Drain and mash. Add sour cream, butter, salt and pepper; beat until smooth and fluffy.

Stir in cheese, bacon and chives.
