French Onion Soup
ingredients
- 1 stick unsalted butter
- 4 onions, sliced
- 2 cloves garlic, chopped
- 2 bay leaves
- 2 sprigs fresh thyme
- 1 cup red wine
- 3 T. flour
- 64 oz. beef broth
- salt
- pepper
- 1 baguette
- 1/2 lb. shredded Guyere cheese

Melt butter in large pan over medium heat. Add onions, garlic, bay leaves, thyme, salt and pepper. Cook onions until soft and carmelized (about 25 minutes). Add red wine and cook until onions are dry (about 5 minutes). Remove bay leaves and thyme sprigs and throw out. Sprinkle flour over onions and stir just to mix in. Cook for about 5 minutes, then slowly stir in beef broth. Add more salt and pepper to desired taste. Bring back to simmer and cook about 10 minutes.

Turn on broiler in oven. Slice baguette and place on ungreased baking sheet. Top with cheese and place in oven until cheese is melted and bubbly brown.

Ladle soup in bowls and top with cheesy bread croutons. Add additional cheese as desired.
