Strain's Russian Teacakes
ingredients
- 1 cup soft butter
- 1/2 cup sifted confectioner’s sugar (more for finishing cakes)
- 1 tsp vanilla
- 2 1/4 cups sifted flour
- 1/4 tsp salt
- 3/4 cups finely chopped pecans

Mix butter and vanilla and sift in confectioner’s sugar. Stir in flour and salt. Mix in pecans.

Chill dough for at least 1 hour.

Preheat oven to 400°. Form into small round balls (size doesn’t matter). Place on ungreased cookie sheet. Bake for 10-12 minutes or until set but not brown. Remove from oven and roll in confectioner’s sugar while warm. Cool completely, then roll in sugar again.
