One day when I’m gone, you may get a craving for this family favorite!

ingredients

  • Éclairs:
  • 1 c. water
  • 1/2 c. margarine
  • 1 c. flour
  • 1/4 t. salt
  • 4 large eggs
  • Almond Cream:
  • small box of instant vanilla pudding
  • 1 1/3 c. milk
  • 1 c. heavy cream, whipped
  • 1 t. almond extract
  • Chocolate Glaze:
  • 1 c. chocolate chips
  • 2 T. margarine
  • 3 t. milk
  • 2 T. light corn syrup (Karo)

    Preheat oven to 400°.

    Mix water, margarine and salt in a heavy pan over medium heat until mixture boils. Remove from heat. Stir in flour. Add eggs one at a time, beating until smooth.

    On a large nonstick baking sheet, spoon out dough to make medium mounds. You should be able to make at least 12. Bake for 40 minutes. Turn off oven and let dough remain in oven for 15 minutes. Remove and cool. Slice in half. Fill with almond cream and drizzle with chocolate.

    Almond Cream:

    Mix pudding, milk and almond extract. Add in heavy cream that has been whipped until stiff. Mix together until smooth.

    Glaze:

    Melt together in a microwave or in a small saucepan over low heat. Spoon over éclairs. Chill and serve.

notes

If you have a piping tool, filling may be piped into each whole éclairs. Then you may turn the éclair upside down and dip into chocolate to cover the top.
