Don Roth's Creamed Spinach

This is a side dish from a well known Chicago steak restaurant. Easy to make and delicious! This recipe was in the newspaper YEARS ago!

ingredients

  • 20 Ounces Frozen Chopped Spinach (2 boxes)
  • 1 small finely chopped onion
  • 2 Tablespoons bacon
  • 2 Tablespoons butter
  • 2 Tablespoons Flour
  • 3/4 Cup Milk
  • 1/2 Cup heavy whipping cream
  • 1/2 Teaspoon Salt
  • 1 Dash Freshly ground pepper

    Cook bacon in skillet, add onion and cook until golden brown, about 8 minutes.

    Stir in spinach until well blended. Remove from heat.

    In another sauce pan, heat butter until melted.

  • 4

    Stir in flour and cook, while stirring, for 2 minutes.

    Stir in milk and cream.

    Slowly heat to a boil.

    Cook until thickened, stirring constantly.

    Add salt, pepper, and spinach mixture. Stir well, heat through, and serve. If not ready to serve, simply reheat when ready.

    Oops! Yes, you are correct. The recipe calls for 2T butter. I will add it. Thanks for pointing it out. I agree that this recipe does taste like the real thing. The recipe was in the paper many years ago.

    Don Roth's is my favorite restaurant and I never go there without ordering their creamed spinach. This tasted just like the creamed spinach they serve at the restaurant. It is so creamy and delicious. The only problem I had was that this recipe didn't call out how much butter I was supposed to use with the flour. I guessed and used 2 tablespoons, and it turned out really good. Thanks for the great recipe!
