Don Roth's Creamed Spinach
This is a side dish from a well known Chicago steak restaurant. Easy to make and delicious! This recipe was in the newspaper YEARS ago!
ingredients
- 20 Ounces Frozen Chopped Spinach (2 boxes)
- 1 small finely chopped onion
- 2 Tablespoons bacon
- 2 Tablespoons butter
- 2 Tablespoons Flour
- 3/4 Cup Milk
- 1/2 Cup heavy whipping cream
- 1/2 Teaspoon Salt
- 1 Dash Freshly ground pepper

Cook bacon in skillet, add onion and cook until golden brown, about 8 minutes.

Stir in spinach until well blended. Remove from heat.

In another sauce pan, heat butter until melted.

Stir in flour and cook, while stirring, for 2 minutes.

Stir in milk and cream.

Slowly heat to a boil.

Cook until thickened, stirring constantly.

Add salt, pepper, and spinach mixture. Stir well, heat through, and serve. If not ready to serve, simply reheat when ready.
