Broccoli Soup

ingredients

  • Fresh Broccoli
  • Onions
  • Garlic
  • Carrots
  • Potatoes
  • Chicken Stock
  • Butter or Olive Oil
  • Thyme
  • Salt, Pepper, Red Pepper Flakes
  • Milk or Cream
  • Gruyere or other cheese
  • Barley

directions

Saute onions and garlic in butter or oil until translucent. Add broccoli and chicen stock until broccoli is tender. Add potatoes, thyme, salt, pepper, carrot, and cook just until potatoes are tender. Adjust seasonings, add just enough cream or milk to thicken a little. Puree about half the soup, yet leaving chunky and textured. Add barley and cook until tender. Grate cheese and sprinkle over top when serving.
