Baked Barley with Shiitake Mushrooms and Caramelized Onions

ingredients

  • 2 tbsp butter
  • 4.5c chopped onion
  • 1 tsp sugar
  • 3c sliced button mushrooms
  • 3c sliced shiitake mushrooms
  • 1.5c uncooked pearl barley
  • 1 tbsp low sodium soy sauce
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp dried thyme
  • 4c vegetable broth

    Melt butter in a Dutch oven over med heat. Add onion and sugar, cover and cook 25 min or until golden brown, stirring frequently. Add mushrooms, cook 10 min or until browned, stirring frequently. Remove from hear. Stir in soy sauce, salt, pepper, and thyme.

    Preheat oven to 350 degrees

    Bring broth to a boil in a med saucepan. Pour broth over barley mixture, cover and bake for 1hr at 350 degrees. Let stand 10min. Garnish with thyme sprigs.
