Mom's Lemon Chicken

ingredients

  • 1/3 cup butter or margarine
  • cut up chicken
  • 1/4 cup of flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/3 cup lemon juice
  • 1/4 cup vegetable oil
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon whole thyme (dried)
  • 1 1/2 table spoons dried minced onion

directions

Butter 13 x 9-inch baking pan. Combine flour, salt and paprika. Dredge chicken in flour mixture. Bake, skin side down at 350°, 30 minutes. Meanwhile, combine lemon juice, oil, pepper,salt, thyme, garlic and onion. Turn chicken over and baste with lemon juice mixture. Bake 30 minutes more.

This is the lemon chicken my mom used to make when I was a kid. I have not made it (yet), but I remember that the lemon sauce was delicious on mashed potatoes served along side.
