Mexican Dip
ingredients
- 30 oz refried beans
- 1 bundle green onions -- chopped
- 3 1/2 oz jalapeno peppers -- diced
- 1 C sour cream
- 1/2 C mayonnaise
- 1 package taco seasoning mix
- 3 ripe avacados -- mashed
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 large tomato -- diced
- 6 oz black olives -- sliced
- 4 oz cheddar cheese -- shredded
- tortilla chips
directions
Avacado mixture: avacado, lemon juice, salt, pepper.
Sour cream mixture: sour cream, mayonnaise, taco seasoning mix.
Layer in following order: beans, 1/2 green onion tops, jalapeno pepper, avacado mixture, sour cream mixture, tomatoes, black olives, rest of the green onions, cheddar cheese.
Serve with tortilla chips.
