Healthy Ranch Dressing and Greek Dip
Two healthy alternatives to the classic dressings.
ingredients
- Ranch Dressing:
- 1 C low fat buttermilk
- 1 C white beans
- 2 T light sour cream
- 1 clove garlic (crushed and finely chopped)
- 1T chopped parsley
- 1 T Parmesan cheese
- salt and pepper
- 1/8 t chili powder
- Greek Dip
- 1 C each canned chickpeas (garbanzo) and canned artichoke bottoms
- a few drops of sesame oil
- 1/2 C light mayonnaise
- 2 T grated Parmesan cheese
- 2 T lemon juice
- 1 clove garlic (crushed and finely chopped)
- 1/2 t salt
- 1/4 t chili powder
- a few grinds of pepper
- 1/8 onion powder

For each recipes, you simply puree all ingredients in a food processor or blender and refrigerate.

I like to keep a little bit bigger chunks of the artichoke in the Greek dip so I keep 1/2 of the artichokes out and finely chop them separately and add them after blending.
