Healthy Ranch Dressing and Greek Dip

Makes 1 1/2 cup of ranch dressing. dip serves 4.

Two healthy alternatives to the classic dressings.

ingredients

  • Ranch Dressing:
  • 1 C low fat buttermilk
  • 1 C white beans
  • 2 T light sour cream
  • 1 clove garlic (crushed and finely chopped)
  • 1T chopped parsley
  • 1 T Parmesan cheese
  • salt and pepper
  • 1/8 t chili powder
  • Greek Dip
  • 1 C each canned chickpeas (garbanzo) and canned artichoke bottoms
  • a few drops of sesame oil
  • 1/2 C light mayonnaise
  • 2 T grated Parmesan cheese
  • 2 T lemon juice
  • 1 clove garlic (crushed and finely chopped)
  • 1/2 t salt
  • 1/4 t chili powder
  • a few grinds of pepper
  • 1/8 onion powder

    For each recipes, you simply puree all ingredients in a food processor or blender and refrigerate.

    I like to keep a little bit bigger chunks of the artichoke in the Greek dip so I keep 1/2 of the artichokes out and finely chop them separately and add them after blending.
