Vegetable Pasta Salad

Ingredients- 1 pound whole wheat macaroni noodles
- 1 package frozen corn
- 1 package frozen peas
- 1 red onion, chopped
- 2 avocados, chopped
- 1 pint cherry tomatoes, halved
- 1 large zucchini
- 1 package silken tofu
- 1/2 cup cider vinegar
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 tablespoons dried basil (or 3 tablespoons fresh)
- 1 tablespoons dried parsley (or 3 tablespoons fresh)
- 1/2 cup water
- 1 cup extra virgin olive oil

Bring several quarts of water to a boil in a large saucepan. Add the macaroni and cook according to package instructions. When pasta is almost done, add the corn and peas cook for 2 more minutes, then drain and rinse with cold water.

In a medium-sized bowl, mix dressing ingredients together until smooth. Combine all ingredients together in a large bowl. Chill until served.
