Fruit Pizza
ingredients
- Crust
- 8 tbls butter (1 stick)
- 3/4 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 tbls milk
- 1 1/4 cups all purpose flour
- 1/2 teaspoon baking powder
- Cream Layer
- 1 cup confectioners’ sugar
- 1 (8 ounce) softened cream cheese
- Topping
- Sliced strawberries, kiwi’s, blueberries, raspberries
- (Or whatever fruit you prefer)
- Glaze
- 1/2 cup preserves (apricot, strawberry) or orange marmalade – your preference
- 2 teaspoons water or brandy

To make the crust, preheat the oven to 350 degrees. Cream together the butter and the sugar. Add the egg, vanilla and milk. Beat thoroughly. Combine the flour and the baking powder. Add the dry ingredients to the butter mixture; blend well. Pat into a well greased 14-inch pizza pan, it will expand so you don’t need to press it all the way to the edges or it will flow over while baking. Bake for 15-20 minutes or until golden brown, depending on your oven. Cool completely.

Heat preserves with water or brandy until melted. Remove from heat. Strain and cool.

Whip together the confectioners’ sugar and cream cheese to form a cream layer. Spread over the baked crust.

Place sliced fruit on top of the cream layer in a circular pattern starting with strawberries on outer edge then kiwi etc. Cover with glaze and refrigerate.

(Note: this should be eaten the same day it is prepared otherwise it gets soggy if stored).
