Easy Vegetable Rice Medley

ingredients

  • 1 tsp. Canola Oil
  • 1 each: Onion, Carrot, Celery Stalk, all chopped
  • 1/2 Red Pepper, chopped
  • 1 Can (14.5 oz.) Chicken Broth
  • 1.5 Cups Minute White Rice, uncooked
  • 1 Cup Frozen Peas

  • 1

    Heat oil in skillet. Add onion, celery, carrot, and pepper. Cook 5 mins. or until tender.

  • 2

    Add broth, bring to a boil.

  • 3

    Stir in rice, peas; cover.

  • 4

    Simmer 5 min. Remove from heat. Let stand 5 min. before stirring.

notes

To save time, replace all of the vegetables with 3 cups frozen mixed vegetables, and add them when you would have added the peas.
