Easy Vegetable Rice Medley
ingredients
- 1 tsp. Canola Oil
- 1 each: Onion, Carrot, Celery Stalk, all chopped
- 1/2 Red Pepper, chopped
- 1 Can (14.5 oz.) Chicken Broth
- 1.5 Cups Minute White Rice, uncooked
- 1 Cup Frozen Peas

Heat oil in skillet. Add onion, celery, carrot, and pepper. Cook 5 mins. or until tender.

Add broth, bring to a boil.

Stir in rice, peas; cover.

Simmer 5 min. Remove from heat. Let stand 5 min. before stirring.
notes
To save time, replace all of the vegetables with 3 cups frozen mixed vegetables, and add them when you would have added the peas.
