Chicken Spaghetti
ingredients
- 1 lb. chicken breast, skinned
- 3 oz. dry spaghetti, cooked
- 1 T. margarine
- 1 T. flour
- 2 T. milk
- 1/2 t. nutmeg
- 1/3 c. onion, chopped
- 1/3 c. celery, chopped
- 1/4 c. gr. peppers, chopped
- 1 clove garlic, minced
- 1 14 oz. can stewed tomatoes
- 1/4 c. cheddar cheese, shredded
- 1/2 c. chicken broth from chicken

Preheat oven to 350°.

Place chicken in pan with water and cook for 20 minutes. Remove meat and chop. Save 1/2 c. broth.

Melt margarine in a small pan, add flour, stirring till smooth. Cook 1 minute. Gradually stir in milk and broth. Cook, stirring till thickened. Add seasoning and nutmeg.

Sauté vegetables in microwave till tender. Stir in tomatoes and milk mixture. Stir in chicken and cooked spaghetti. Pour into casserole sprayed with Pam.

Cover and bake 20 minutes.

Sprinkle with cheese. Uncover and bake 5 minutes till cheese is melted.
