Chicken Pilaf

One of Beth’s favorites!

ingredients

  • 1 lb. red potatoes washed and cut into bites
  • 5 carrots, peeled and sliced
  • 5 green onions chopped 1 c. brown rice
  • 2 t. chicken bouillion
  • 1 lb. chicken breast, cooked and cut into bites (I usually fry in a non stick pan)
  • 1 can Italian green beans, drained
  • olive oil

directions

    In 1 T. olive oil in a large Dutch oven, fry potatoes, carrots and green onions until lightly browned. Add 3 cups of water and rice. Cover and simmer for 45 minutes until rice is tender.

    Add cooked chicken and green beans.
