Breakfast MuffinsLynn Boyd
A fun brunch or breakfast treat
- total time:
- 1 hr
- 1 can Hungry Jack biscuits
- 1/2 lbs grated Monterey Jack Cheese
- 1 c chopped green onions
- 1/2 lbs cooked and crumbled bacon
- 4 c Eggsbeaters and regular eggs
Preheat oven to 350 degrees. Place 1/2 biscuit in each cup of regular muffing tins. Press up sides to make crust.
Fill with bacon, onion and cheese. Add egg mixture just under the top of the tin. (too much and it will spill over)
Bake for about 20 minutes and let rest.
Reheat in microwave for an easy breakfast
