Sweet Potate and Cabbage in Spicy Satay Sauce
Spicy vegetarian satay
ingredients
- 1 x tablespoon olive oil
- 1 x large onion
- 4 x garlic cloves
- 2 x inch ginger
- 3 x small sweet potatoes
- 1 x 450g/1pound cubed white cabbage
- 2 x teaspoon paprika
- 1 x teaspoon cayenne pepper
- 1 x tin chopped tomatoes
- 1 x 250ml pineapple juice
- 1 x 125g smooth peanut butter
- 1 x carrot, grated
- 1 x raw beetroot, grated
- 1 x banana, sliced
- 1 x lime, juiced
- 2 x tablespoons coriander, chopped

Heat the oil in wok and saute onion, garlic and ginger for 2 minutes.

Add sweet potatoes and cabbage.
When veg starts to soften, add paprika and cayenne. Stir to coat veg with spice.
Add tomatoes and pineapple juice. Cover and simmer for 35-40 minutes, or until veg is soft.
Stir in peanut butter, and season with salt and pepper. If a little thick, add water.
Toss the carrot, beetroot and banana in the lime juice and scatter over the veg. Garnish with coriander and serve over steamed rice.
