Houseboat Blondies
Jenny and I couldn’t keep out of these on the houseboat and I don’t think anyone else could either.
ingredients
- 1c. pecans or walnuts
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 12 Tbl. melted & cooled butter
- 1 1/2 c. light brown sugar
- 2 lg. lighly beaten eggs
- 4 tsp. vanilla
- 6 oz. total of candy chips or more
- (white chocolate, semisweet & heath)

Spread nuts on large baking sheet. Bake 10-15 minutes at 350* on the middle rack. Let cool. Chop coarsely and set aside.

While nuts cook, cut 18“ long foil & fold lengthwise to be 8” wide. Fit the foil into a 13 x 9“ pan. Push over edges. Cut 14” long foil & fit in the same way. Spray with a nonstick cooking spray.
Blondies

Whisk flour, baking powder and salt. Set aside. Whisk melted butter & sugar together. Add eggs & vanilla. Mix well. With a rubber spatula, fold dry ingredients into wet. Do not over-mix. Fold in chocolate & nuts. Turn batter into pan.

Bake 20-25 minutes until the top is shiny, cracked & a light golden brown. Cool in pan. Cut, remove and serve.
