Mashed Sweet Potatoes

Cutting the potatoes into small cubes before boiling prevents them from becoming waterlogged and results in a fluffier mash.

  • ¼ cup butter or margarine

  • ¼ cup milk

  • 4 pounds sweet potatoes or white potatoes, peeled and cut into ½-inch cubes (about 10 cups)

  • ½ teaspoon salt

  • Butter or margarine (optional)

  • ⅓ cup dairy sour cream

  • ½ teaspoon freshly ground black pepper
