Mollie's Minestrone

ingredients

  • 1/2 c Small pasta
  • 1/3 lb Italian sausage
  • 1 lg Onion, chopped
  • 2 lg Carrots, diced
  • 2 ribs Celery, diced
  • 3 clv Garlic, minced
  • 6-8 c Beef stock
  • 1 Leek washed and chopped
  • 1 Zucchini, diced 1/2 inch
  • 1/4 lb green beans
  • 3 c Cabbage, shredded
  • 1 tsp Dried oregano
  • 1 can (28 oz) Chopped tomatoes, including juice
  • 1 can (19 oz) Cannellini or garbanzo beans, including juice
  • 3 Tbsp Dried parsley
  • 1 Tbsp Dried basil

directions

Saute sausage in large soup pot until no longer pink. Add onion, carrots, celery, garlic, and saute until tender0crisp, about 5 minutes. Add 6 cups of the beef stock, leek, zucchini, green beans, cabbage and canned tomatoes with liquid. Simmer covered for 1 hour. Add canned beans, parsley, pasta, basil, and oregano. Simmer for 30 minutes or until pasta is done. Add salt and pepper to taste. Thin soup if necessary with remaining beef stock.
