Hummus
ingredients
- 3 cans chickpeas (2 drained, one undrained)
- 3 large garlic cloves
- 1 1/2 teaspoons kosher salt
- dash of tamari
- juice from 2 medium lemons
- 3/4 cup tahini
- 1/4 cup (packed) flat leaf parsley, minced
- 2 teaspoons ground black pepper
- 1/2 teaspoon cayenne
- 1/4 cup minced scallion
- 3 large roasted red peppers (optional)

Mash all beans until it becomes a thick paste. Add mashed beans and all other ingredients to the food processor. Process until the mixture is smooth. Taste to correct seasonings and adjust accordingly.

Enjoy with toasted pita bread.
notes
To make roasted red pepper hummus add the red peppers to the food processor with the other ingredients.
