ingredients

  • 1 C. uncooked bulgur wheat
  • 1/3 C. fresh lemon juice
  • 1/3 C. chicken broth
  • 1/3 C. olive oil
  • 3 garlic cloves, minced
  • 1 1/2 tsp. salt
  • 1/4 tsp. ground pepper
  • 2 C. finely chopped red onion
  • 5 C. chopped tomato
  • 1/2 C. chopped fresh parsley
  • 1/2 C. chopped fresh mint
  • 1/4 C. chopped fresh dill
  • 2 C. peeled, seeded & chopped cucumber
  • 1 – 2 large red bell peppers, chopped

directions

Place bulgur in a large glass bowl. Stir together lemon juice and next 5 ingredients; drizzle lemon juice mixture evenly over bulgur and let stand 30 minutes at room temperature. Layer onion and next 6 ingredients over bulgur mixture. Cover and chill at least 24 hours or up to 48 hours.
