Grilled Salmon Packets
ingredients
- 4 6 oz Salmon fillets
- extra virgin olive oil
- salt
- black pepper
- 1 tbsp fresh rosemary leaves, minced
- 8 lemon slices
- 1/4 c lemon juice
- 1/2 c white wine
- 4 tsp capers
- 4 pcs aluminum foil

In a small bowl, combine lemon juice, wine and capers.

Brush top and bottom of salmon fillets with olive oil and season with salt, pepper and rosemary. Place each piece of seasoned salmon on a piece of foil. Top each piece of salmon with 2 lemon slices and 3 tbsp juice, wine and caper mixture. Wrap salmon tightly in the foil packets and place on the hot grill and cook for 10 minutes.
