Broccoli Casserole
ingredients
- 2, 10-ounce packages of chopped broccoli, thawed
- 1, 12-ounce container low fat cottage cheese
- 8 ounces of 2% Sharp Cheddar Cheese, shredded
- 1 can of cream of chicken or mushroom soup (low-fat if available)
- 2 tablespoons finely chopped or grated onion
- 2 eggs, beaten
- 2 tablespoons lemon juice
- 1/2 cup low-fat mayonnaise
- Salt and Pepper

This is the low-fat version. The regular recipe used 1 cup mayo, regular soups, 8 oz regular cheese and no cottage cheese and then an additional 4 ounces shredded cheese sprinkled on top.
