COLORFUL BEAN SALAD
ingredients
- 3 Tbsp. olive oil
- 3 Tbsp. red wine vinegar
- 1/2 tsp. ground cumin
- 1/2 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 can (16 oz.) kidney beans, rinsed and drained
- 1 can (15 oz.) black beans, rinsed and drained
- 1 can (11 oz.) Mexicorn, drained
- 1/4 C. thinly sliced green onions
directions
In a bowl, combine the first six ingredients; mix well. Add the beans, corn and onions; stir to coat. Cover and refrigerate until serving.
