Creamy butternut squash soup made without dairy.
ingredients
- 1 medium butternut squash, peeled, seeds removed and cut into chunks
- 1 medium yellow onion, chopped
- 4 cloves of garlic, peels on and smashed
- 1 tablespoon extra-virgin olive oil
- 1 or 2 sprigs fresh thyme
- 4 cups water
- 1/2 c white wine
- Kosher salt
- Cayenne pepper - garnish
- Olive oil for drizzling - garnish
