Peperonata & Goat Cheese on Toast

ingredients

  • 1 baguette
  • 3 tbsp olive oil
  • 2 gloves garlic
  • 1 red pepper
  • 1 plum tomato
  • 2 tbsp finely chopped shallots
  • 1/2 tsp sugar
  • 1/4 tsp dried red pepper
  • 1 1/2 tbsp balsamic vinegar
  • 2 oz goat cheese
  • Fresh basil

    Slice bread diagonally 1/4” thick. Arrange on baking sheet. Brush tops w/1 tbsp olive oil and sprinkle w/salt. Broil, turn once. Cool.

    Halve garlic & finely chop bell pepper. Seed tomato & finely chop.

    In small sauce pane cook garlic in remaining oil until just golden. Discard garlic. Add bell pepper, tomato, shallot, sugar, and red pepper until bell pepper is softened. Stir in vinegar and cook until liquid is evaporated. Transfer to bowl and cool to room temp. Season with salt & pepper.

    Spread goat cheese on toast. Top w/peperonata & garnish w/basil.
