Rigatoni Vodka
ingredients
- 1 pound rigatoni
- 2 cloves garlic, finely chopped
- 1 large can diced tomatoes, undrained
- 1 medium can tomato sauce
- 2 small containers heavy cream
- 1/4 cup vodka
- olive oil for cooking
- grated Parmesan cheese
- basil
- Parsley
- salt and pepper
directions
Lightly brown garlic in olive oil. Add tomatoes. Cook down. Add salt, pepper, basil and vodka. Add can of tomato sauce. Stir well and cook about 1/2 hour. Gradually add cream until mixture is pink. Stir and cook until thickened. Pour over cooked rigatoni. Add parsley and Parmesan cheese.
