Pineapple Pork/Chicken
Perfect pineapple dish. Goes well with rice and saute potatoes.
ingredients
- 450g pork/chicken fillet
- 1.5 tablespoons oil
- 3 tablespoons coarsly chopped garlic
- 225g chopped pineapple
- 2 tablespoons finely chopped coriander
- 1 tablespoon dark soy sauce
- 2 teaspoons sugar
- MARINADE
- 2 teaspoons light soy sauce
- 2 teaspoons red wine/cherry/rice wine
- 1 teaspoon sesame oil
- 2 teaspoons flour/cornflour

-Cut the pork/chicken into small 2 inch strips and add it to the marinade.

-Heat the wok over high heat till very hot, add the garlic and stir-fry for 20 seconds.

-Add the pork and stir fry for 3/4 minutes.

-Add the pineapple, coriander, soy sauce and sugar, and continue to stir fry for another 5 minutes.
