ingredients

  • Salad:
  • 1 c orzo pasta
  • 1 can sliced ripe olives (2 1/4 oz.)
  • 1 c dived red bell pepper
  • 1/4 c crumbled feta cheese
  • Dressing:
  • 1 pkt (1 oz.) Hidden Valley Ranch
  • 3 T olive oil
  • 3 T red wine vinegar
  • 1 t sugar
  • 1/2 t dried basil

directions

    Cook orzo according to package directions, omitting salt.

  • 2

    Drain; rinse with cold water. Mix orzo, olives, red pepper, and feta cheese in a large bowl.

    Whisk together dressing mix, oil, vinegar, sugar, and basil. Stir dressing into orzo mixture.

  • 4

    Cover and refrigerate at least 2 hrs.
