ingredients

  • 8 medium carrots -- sliced
  • 2 large onion -- chopped
  • 4 ribs celery
  • 1 large green bell pepper -- seeded anc chopped
  • 1 tbsp olive oil
  • 4 C water
  • 1 28 oz can diced tomatoes
  • 2 C v8 juice
  • 2 C cabbage -- chopped
  • 2 C frozen cut green beans
  • 2 C frozen peas
  • 1 C frozen corn
  • 1 15 oz can garbanzo beans -- rinsed and drained
  • 2 tsp chicken bouillon cubes
  • 1 1/2 tsp dried parsley
  • 1 tsp salt
  • 1 tsp dried marjoram
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1/2 tsp dried basil -- 1/4 teaspoon pepper

directions

In a Dutch oven or soup kettle, saute the carrots, onions, celery, green pepper and garlic in oil until crisp-tender. Stir in remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 1 - 1 1/2 hours or until vegetables are tender. Discard bay leaf before serving.
