Hearty Vegetable Soup
ingredients
- 8 medium carrots -- sliced
- 2 large onion -- chopped
- 4 ribs celery
- 1 large green bell pepper -- seeded anc chopped
- 1 tbsp olive oil
- 4 C water
- 1 28 oz can diced tomatoes
- 2 C v8 juice
- 2 C cabbage -- chopped
- 2 C frozen cut green beans
- 2 C frozen peas
- 1 C frozen corn
- 1 15 oz can garbanzo beans -- rinsed and drained
- 2 tsp chicken bouillon cubes
- 1 1/2 tsp dried parsley
- 1 tsp salt
- 1 tsp dried marjoram
- 1 tsp dried thyme
- 1 bay leaf
- 1/2 tsp dried basil -- 1/4 teaspoon pepper
directions
In a Dutch oven or soup kettle, saute the carrots, onions, celery, green pepper and garlic in oil until crisp-tender. Stir in remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 1 - 1 1/2 hours or until vegetables are tender. Discard bay leaf before serving.
