Bamyeh (Lebanese Okra Stew)
Hearty okra and beef stew with tangy fire roasted tomatoes over basmati rice.
ingredients
- 2 large bags frozen okra, sliced or whole baby okra
- 1 lb stew beef
- 1 15oz can fire roasted tomatoes- diced
- 1 6oz tomato paste
- 2 tbsp beef base
- 4 large garlic cloves, minced
- 2 tbsp chopped Italian parsley
- 2 tbsp olive oil
- salt & pepper to taste
directions
In large pot add okra and cover with water, about 2 inches above top of okra. Cook on medium-high heat to boil. Meanwhile, in medium frypan on high heat add 2tbsp olive oil, place stew beef in pan and brown each side for about 2 min each, remove from heat and set aside. To okra, add can of roasted tomatoes, tomato paste and beef base, cover pot and let simmer for about 30min. In same frypan that beef was cooked add minced garlic and sauté for about 2min. Add beef, garlic, parsley and salt and pepper to okra, simmer for another 30min. Remove from heat and serve over steamed rice with lemon wedges.
notes
For a heartier meal add diced potatoes with the okra while it cooks.
