- 8 to 10 organic grape or cherry tomatoes, halved
- 2 tablespoons chopped roasted peppers
- 4 oz. crumbled goat cheese
- 4 large organic happy eggs
- 1/3 Greek style yogurt or sour cream
- Fresh chopped basil, parsley or cilantro
- Sea salt and fresh ground pepper

Make this dairy-free with vegan "cheese" and plain unsweetened non-dairy sour cream or yogurt. The chips can be stale- I won't tell.
