Organic gluten-free blue corn chips
8 to 10 organic grape or cherry tomatoes, halved
2 tablespoons chopped roasted peppers
4 oz. crumbled goat cheese
4 large organic happy eggs
⅓ Greek style yogurt or sour cream
Fresh chopped basil, parsley or cilantro
Sea salt and fresh ground pepper
Make this dairy-free with vegan "cheese" and plain unsweetened non-dairy sour cream or yogurt. The chips can be stale- I won't tell.
