- 4 ripe avocados, pitted & peeled
- 2 8-oz packages cream cheese, room temperature
- 2 tbsp minced shallots or green onions
- 1 tbs fresh lemon juice
- 1 tsp chili powder
- 1/2 tsp salt
- 2 tsp minced garlic
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped unsalted pistachio nuts
- 1/2 cup sliced pitted black olives
- 10 ripe cherry tomatoes
- Butter lettuce or Boston lettuce
- Tortilla chips
