Rolled and Stuffed Meatloaf
ingredients
- 1 lb lean ground beef
- 1 lb turkey or chicken
- small package ground veal if you want
- 1/2 cup bread crumbs
- 1 egg
- 1/2 sweet onion diced
- 2 cloves garlic
- salt and pepper to taste
- 3-4 tablespoons Parmesan cheese
- 2-3 roma tomatoes sliced
- 5-6 slices Provolone cheese
- 6 slice prosciutto
- spinach
- 8-10 sliced mushrooms

Preheat oven to 450°

Mix together all meats, breadcrumbs, egg, onion, garlic, salt, pepper and Parmesan cheese. Flatten on a large cookie sheet lined with wax paper or cling wrap to 1/2 inch thickness. Line middle of the meatloaf with spinach, prosciutto, provolone, tomatoes, and mushrooms. Using the wrap, fold the 2 sides in and pinch shut. Seal ends by pinching shut. Place on greased cookie sheet and bake 30-35 minutes or until done.

Remember you can stuff this however you want. I like to use sharp cheddar and sauté the vegetables before stuffing
