Layered Veggie Bean Dip

A staple during football season, this delicious, healthy recipe is great any time of year.

ingredients

  • 1 can - refried beans with green chilies
  • 1/2 cup - sour cream
  • 1/2 cup - shredded cheese (your choice)
  • 1 - green pepper, diced
  • 2 - tomatoes, diced
  • 1/4 - onion, diced
  • 1/2 small can - diced black olives
  • Handful - diced jalapenos
  • Shredded lettuce
  • 1 tsp - minced garlic
  • 1 TBS - Everglades seasoning or similar cajun-style, such as Tony’s
  • 1/4 tsp - cumin
  • 1 tsp - water
  • Salt
  • Pepper
  • Adjust vegetable amounts or types as preferred or as needed.

    Put the refried beans in the food processor, and add the water, cumin, garlic, Everglades, pinch of salt, and a pinch of pepper. If you want to add more heat, consider adding a bit of hot sauce. Process about 10 seconds, then season to taste as needed. Blend until well mixed and texture is thick and creamy.

    Spread bean dip into a 9 inch pie plate or similar dish. Layer sour cream, cheese, and then remaining ingredients, topping with shredded lettuce. If most ingredients were already cold, it’s ready to serve. Otherwise, chill for about 1 hour.
