Enchiladas
ingredients
- 1 (10 count) pkg. Tortillas
- 2 c. cooked chicken, cut into chunks
- 1 (14 oz.) can chicken broth
- 1 (16 oz.) sour cream
- 1/4 c. flour
- 1/2 stick butter
- salt to taste
- chopped onion (optional)
- 2 (8 0z.) shredded cheddar cheese

1. Preheat oven to 350°.

2. Spray a 13 x 9 x 2” pan with cooking spray.

3. In a medium saucepan combine Chicken broth, sour cream, flour, butter and salt. Bring to boil stirring constantly.

4. Layer enchiladas as follows:

1/2 of the tortillas
- 6
1/2 of the chicken
- 7
1/2 of the creamy broth
- 8
1/2 of the cheese Repeat Layer
- 9
5. Bake at 350° for 30 – 45 minutes.
