Best Ever Curry Chicken Salad
Fresh salad with a delicious balance of sweet, savory & crunch!
ingredients
- 1 + 1/2 lb cooked diced cooled chicken
- 1 small 2 oz bag sliced almonds
- 20 green seedless grapes, washed & sliced in half
- 1/3 cup sweet yellow pepper finely diced
- 1/3 cup diced purple onion
- 3 Tblsp chopped fresh cilantro
- Juice of half of a fresh lime
- 1 tsp curry powder (add more if desired after tasting)
- salt & pepper to taste
- 1/3 cup mayonnaise (add more if desired for moistness)

Combine ingredients & chill at least one hour. Adjust seasonings after it sets if necessary. Flavors meld nicely after it chills for awhile.
