A fresh, healthy alternative to hummus & a favorite of my friend Annie!

ingredients

  • One can black beans rinsed & drained
  • 2-3 cloves garlic coarsely chopped
  • 4 Tablespoons extra virgin olive oil
  • Juice of 1/2 lime
  • 6 dashes of hot sauce or quantity to taste
  • one teaspoon season salt
  • one teaspoon ground cumin
  • one teaspoon chili powder
  • three plum roma tomatoes diced
  • 1/2 cup fresh cilantro leaves chopped
  • 1/4 cup finely chopped purple onion (optional)

directions

  • 1

    Combine first 8 ingredients in food processor until smooth. For a creamier consistency you may want to add a bit more olive oil. Taste for seasoning.

    Turn dip out of processor into bowl & fold in remaining ingredients.

    Best if chilled for one hour before serving.

  • 4

    Serve with chips, pita or crudite.
