Southwestern Black Bean Dip
A fresh, healthy alternative to hummus & a favorite of my friend Annie!
ingredients
- One can black beans rinsed & drained
- 2-3 cloves garlic coarsely chopped
- 4 Tablespoons extra virgin olive oil
- Juice of 1/2 lime
- 6 dashes of hot sauce or quantity to taste
- one teaspoon season salt
- one teaspoon ground cumin
- one teaspoon chili powder
- three plum roma tomatoes diced
- 1/2 cup fresh cilantro leaves chopped
- 1/4 cup finely chopped purple onion (optional)

Combine first 8 ingredients in food processor until smooth. For a creamier consistency you may want to add a bit more olive oil. Taste for seasoning.

Turn dip out of processor into bowl & fold in remaining ingredients.

Best if chilled for one hour before serving.

Serve with chips, pita or crudite.
