Grammie Lucy's Minestrone
January 2008: Tuscan Dinner
ingredients
- 6 cups water
- 2 tsp Italian seasoning
- 3 heaping tsp chicken bouillon (caldo de pollo)
- 3 chopped celery sticks (good size chunks)
- 2 chopped carrot sticks (good size chunks)
- 3 chopped medium potatoes
- 1 large onion (coarsely chopped)2 cloves garlic (coarsely chopped)
- 1 large spoonfull (appx. 1.5 tbsp) olive oil
- 1.5 lbs zucchini, quartered and chopped
- 1/4 head cabbage, shredded
- 1/2 - 3/4 cups small macaroni
- 1 can diced tomato
directions
In large pot, heat water on medium-high heat. Add garlic, onion, olive oil, seasoning, and bouillon.Bring to a boil. Chop vegetables. Once water is boiling, add vegetables. Add cabbage. Bring to a boil. Add tomato. Simmer covered for 2.5 hours. Add macaroni. Cook until macaroni is tender.
