Zucchini Pineapple Bread
ingredients
- 3 eggs
- 1/3c. oil
- 2/3 c. sour milk
- 1 1/2 c. sugar
- 2 tsp. vanilla
- 2 c. peeled, seeded, shredded zucchini
- raisins (optional)
- 1 - 8 oz. can of crushed pineapple, drained.
- 3 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 1/3 tsp. nutmeg

Beat eggs until a lemon color.

Beat in the oil, milk, sugar and vanilla.

Stir in zucchini, raisins, and pineapple.

Sift together flour, bakind soda, salt, baking poder, cinnamon, and nutmeg.

Add to remaining mixture.

Pour into 3 small loaf pans and bake at 350 for 60 minutes or until tester comes out clean.
