Mexican Style Pasta Bake
ingredients
- 12 oz dried bow tie pasta
- 1/2 c chopped onion
- 3 T butter
- 1/3 c flour
- 1 t salt
- 1/4 c chopped cilantro
- 1/2 t ground cumin
- 3 c milk
- 6 oz cheddar cheese, cubed
- 1 1/2 c Monterey jack cheese, grated
- 1 c salsa
- 2/3 sliced olives
- chili powder

1. Preheat oven to 350°. Grease 9x13 casserole dish. Set aside. Cook pasta according to package instructions and drain.

2. In large saucepan, cook onion in butter until tender. Add flour, salt, cilantro, and cumin. Add milk all at once and cook and stir until thickened and bubbly. Reduce heat to low. Add cheddar cheese and 1 c of Monterey Jack cheese. Stir until cheese is melted and pour over pasta. Stir to combine.

3. Layer half the pasta, all of the salsa and then remaining pasta mixture in casserole dish. Sprinkle with remaining cheese and olives. Sprinkle lightly with chili powder. Bake, uncovered 15-20 minutes until bubbly.
