Arroz con Pollo
Arroz con pollo is the refrain from a children’s nursery song, and a popular dish throughout Latin America. Common ingredients include rice, sofrito (mixed vegetables and fresh herbs), chicken, and saffron.
ingredients
- 1 lb boneless skinless chicken breast
- 1 can corn kernels
- 1 can green peas
- 1 red pepper, chopped
- 1 carrot, chopped
- 1 package of Sazón with coriander and annatto (Goya)
- 1 tbsp salt
- 1 tbsp pepper
- 2 tbsp dried basil
- 2 cups uncooked rice
- 3 cups water

1. Spray a nonstick pot with Pam. Add salt, pepper, sazón, basil, corn, pepper, carrot and chicken breasts; brown.

2. Add three cups of water and simmer for about 15 minutes.

3. After simmering, pull chicken and all veggies out of the broth, set aside.

4. Add the uncooked rice to the broth and simmer at medium-low heat for 30 minutes.

4. Meanwhile shred chicken breasts and mix with the stewed veggies.

5. Once rice is done, mix all ingredients.
