Linguine Marvini
Linguine are a form of pasta, flat like fettuccine and trenette, but narrow like spaghetti. The name means “little tongues” in Italian.
ingredients
- 20 cloves garlic, peeled and thinly sliced
- 1/2 cup fat-free butter
- 1 tbsp fresh lemon juice
- 1 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 6 tbsp freshly grated Parmesan
- Several sprigs fresh basil (about 14 leaves)
- 1 pound thin linguine

1. In a large pot, bring 6 quarts of water to a boil. 2. Meanwhile, spray Pam in a large saucepan over medium heat. Add the garlic and sauté until golden brown, about 2 minutes.

3. Reduce heat to low and stir in the butter, lemon juice, salt, pepper, and 3 tablespoons of the Parmesan. Remove from heat.

4. Add all but one sprig of the basil. Cover and let stand.

5. Cook the linguine according to the package directions.

6. Toss the warm linguine with the Marvini sauce. 7. Sprinkle with the remaining Parmesan and garnish with the basil.
