Pico de Gallo
Pico de gallo is a tomato-based dish better known as salsa Mexicana because it shares colors with the Mexican flag: red (tomato), white (onion), and green (chile).
ingredients
- 10 roma tomatoes (seeded)
- 1 red onion
- 1 jalapeno pepper
- 2 medium cloves garlic
- juice of one lime
- 4 tbsp chopped fresh cilantro
- 1 tsp coarse salt
- 1/2 tsp fresh ground black pepper

1. Seed and dice tomatoes.

2. Chop onion, jalapeno and garlic to a fine consistency.

3. Add cilantro, salt, pepper and lime. Mix well.

4. Cover and refrigerate for at least 3 hours. Best if served the next day.
