Shrimp and Pineapple Salad
Served at Kelli’s Bridal Shower
ingredients
- 2 tbsp fresh lemon juice
- 1/4 C white wine vinegar
- 1 tsp Dijon mustard
- 1/4 C olive oil
- 2 tbsp Oriental sesame oil (dark)
- 15 water chestnuts (canned) washed and chopped
- 2 tsp ginger root -- freshly grated
- 1 C diced fresh pineapple
- 1 lb. cooked - deveined shrimp (large) -- drain well
- 1 head bib lettuce
- 2 scallions with green tips -- minced
- 1 tbsp sesame seeds -- lightly toasted
directions
Combine ingredients to make dressing. Just before serving combine water chestnuts, ginger root, pineapple and shrimp and toss with dressing.
Serve on leaf of bib lettuce. Garnish with scallions and sesame seeds.
