Holiday Mashed Potatoes

ingredients
- 12 potatoes, peeled and quartered
- 8 oz cream cheese, cubed
- 1/4 cup margarine
- 1/2 cup sour cream
- 1/2 cup milk
- 2 eggs, beaten
- 4 green onions, chopped
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp nutmeg

Cook potatoes until tender. Drain and place in large mixing bowl. Mash.

Add cream cheese and margarine; beat until smooth.

Add sour cream.

In small bowl, combine milk, eggs, onions and seasonings.

Add to potatoes, whip until mixture is fluffy.

Pour into baking dish. Cover and refrigerate for several hours. May be frozen.

Bake at 350° for 45-50 mins, until golden brown.
